Jen’s “Melt In Your Mouth” Short Ribs!!
This braised short ribs recipe offers an easy and affordable way to entertain with out much work behind the scenes. The crock pot will do the work for you!
So get out there and go to the meat department in your local grocery store and get cooking! At the meat department, ask for 3 1/2  lbs of beef short ribs.  Enough to serve 4 people. Then get yourself a fanastic crockpot which I have found the 6 qt to work the best for larger meals.  Here is an example of what you need in your kitchen.

Now , here are the ingredients you will need:

 3 1/2 lbs of beef short ribs

 salt & pepper

 1 1/2 c. flour

2 large white onions, sliced or 3 medium white onions

 4-5 tbsp. olive oil

 1 bottle of bbq sauce

 1 can of beer

 2 tbsp of brown sugar

Lay flour in a flat large platter and shake some salt and pepper onto the flour and stir gently.  Dip the short ribs in the flour, making sure to get flour on each side. 

Add olive oil to fry pan. Heat fry pan to medium high lay the short ribs in the oil when oil is heated through.  Brown the short ribs on all 4 sides. 

It is important whenever using a crock pot to lay the vegetables on the bottom layer 1st, then add the meat to the top. I find  this allows for the flavors of the vegetables to really get into the meat thoroughly.

So, place your onions on the bottom of the crockpot, add the browned short ribs , pour the bbq sauce and can of beer to the crockpot.  Stir in brown sugar.   You should have enough liquid to cover the meat using these two liquid items. If not, add a little more of each or you can always add a cup of water to raise the liquid level in the crockpot.

The great thing about this recipe is that you CANNOT mess it up by adding more beer, or more bbq or more salt or pepper to your liking. It is just a great blend of flavors and by using a crockpot you won’t have to lift a finger for dinner tonight!

I usually start this in the mid-morning, and cook it in my crockpot all day, about 8 hours.  If I put it in in my crockpot around 9am after I drop the kids at school, then I know dinner will be great and done by 5pm.  It is so easy and so yummy!!

I usually serve these short ribs with garlic spinach on the side and any type of mashed potato or other potato dish. There is just something about potatoes and shortribs!! They are so perfect together!! ENJOY!!
