For any busy parent, time is of the essence!! We only have a few moments a day to get everyone else fed, and off to school and all their events.. let alone FEED OURSELVES!!

Well, here is my answer to this classic problem… This is so easy and you probably have all the exact needed ingredients.. you CAN DO this and you CAN eat healthy w/limited time and budget!

Items You will need

  1. Some tomatoes – any good tasting tomatoes will do.
  2. Mozzarella Cheese – for this quick and easy recipe any will do – even string cheese if you have it on hand.
  3. Fresh Basil (we grow ours at home in our DIY Backyard Cedars Herb Garden Kit – found it on Amazon – it’s awesome)
  4. Olive Oil
  5. Balsamic Vinegar
  6. A Plate
  7. Some Salt


First you will cut up the tomatoes into what ever shape you want – sliced or diced

Second you will cut up your Mozzarella cheese again – any shape you feel like

Third – Take some Basil – pinch the leaf off the stem – place it on top of the tomatoes

Fourth – Place your mozzarella on top of the Basil on top of the tomatoes slices

Fifth comes the fun part – drizzle Olive oil over the whole thing and then Drizzle Balsamic over it all

Sixth – Take a pinch of salt and sprinkle over the top

And that’s all there is to it – Dig in and enjoy your refreshing healthy beautiful snack
