This is a big week—back to school week for us, and with that I find sometimes I need a quick and easy meal because we are back to the busy days of school and activities again!
Healthy cooking for one is easy to do if you just know a few tricks. I often find I am needing to make a meal for myself when my husband is working late but I need to keep it budget and time-friendly. I need something that the kids will try as well and having given them a taste here and there–
This one is a favorite!
One very easy meal is a Garbanzo Zucchini Pepper Pasta and the recipe is as follows:
1/2 14 oz can Organic Garbanzo Beans, drained
1 Small Zucchini, cubed
1/2 Red Bell Pepper, diced
1 Tsp minced garlic
3 Tbsp Olive oil
2 Tbsp Soy Sauce
1 Tbsp Balsamic Vinegar
Salt and pepper to taste
1/4 Tsp Italian dry herbs
Splash Of Your Favorite Red Wine
1/2 jar of Your favorite Marinara Sauce
1/2 lb of High fiber Rotelle pasta
Boil and cook pasta as noted on box, drain and set aside, keeping the noodles warm. In a seperate pan, while the noodles are cooking, drizzle olive oil into a nonstick fry pan, heat on medium.
Toss in the minced garlic and zucchini and red bell pepper and slowly cook through til slightly browned and zucchini and bell pepper is is slightly softened through. Add the splash of balsamic and the 2 tbsp soy sauce, salt and pepper and italian herbs as well as garbanzos. Toss lightly in pan on medium until garbanzos are heated through as well.
Add Marinara sauce and splash of red wine to the veggie fry pan mixture and simmer 5-8 mins.
Toss the Garbanzo Zucchini Pepper Sauce over the rotelle pasta and serve with shaved parmesean on top, and ENJOY!
Healthy Cooking For One just takes a little reduction in the recipe amounts, and being creative with spices and reduced oils but you still can have affordable, easy and healthy meals anytime!
