Hey everyone, today I had a great group of ladies over and we endulged in my Easy PEA-SY Pasta Salad. I made most of it the night before and then added the mayo based mix the next morning before my luncheon. It was so easy and SO inexpensive!
I spent $1.49 on a box of high-fiber corkscrew pasta, diced up several different veggies for another $2.00 total (see list below) and a few dollars on the mayo, olive oil, spices and 2 eggs.. and voila, a major pasta dish to feed our ladies luncheon. Served with a green salad and a shepard’s bread loaf sliced w/butter on the side.
So easy pea-sy and inexpensive.
1 16 oz package of any high-fiber corkscrew pasta
1 large red bell pepper, diced
2 hardboiled eggs, diced
3 green onions, chopped
2 carrots , diced
1 can of sweet corn, drained
1 c of frozen peas, thawed
Salt & pepper
1 tsp lemon pepper
1 tsp . salt free Mrs. Dash or other spice mix
5 tbsp olive oil
5 tbsp balsamic vinegar
1 1/2c lowfat or regular mayo
1/2 c low fat ranch dressing
Note: You can feel free to add any of your favorite veggies, cooked chopped green beans, garbanzo beans, or olives are a great addition!
Cook pasta per instructions. Drain and cool. Use large bowl and mix the above ingredients into bowl w/cooled pasta. Mix well, and refridgerate 1 hour. The refridgeration allows the flavors to blend.
If you’d like and you are short on time, do everything the night before w/the pasta & veggies and diced egg , cover w/saran wrap and leave in fridge over night. Then the next morning before your event, mix in the remaining spices and wet ingredients. Put back in fridge for 1/2 hour or so then serve chilled.
Serving this easy pea-sy pasta salad is a cinch and makes a great meal with a green salad and your favorite bread!
All for a few dollars, its a great way to entertain on a budget! Plus, my kids LOVE this pasta salad!
