Lemon Kitchen’s Power Ball Recipe:

Try these healthy little bites to satisfy your sweet tooth or if you need a little pick me up. Plain or covered in Dark Chocolate (I know not technically paleo – but its only a very small amount of chocolate and if you get dairy free chocolate it is the best! The chips cost a little more, but they are worth it!

Ingredients:
– 1 1/2 Tablespoon of Coconut Oil
– 2 Tablespoons of Honey
– 3/4 Cup Almond Flour

Directions:
Heat 1 1/2 tbsp of coconut oil with 2 tablespoons honey in a pan on low. Add 3/4 c almond flour. Mix until moist and heat until warmed through.

When you heat it, it should just be hot to the touch. BUt not like frying up. Remove from pan and when cool enough roll pieces of the dough into balls.

Then melt a 1/4 c or so of paleo (dairy, soy free) chocolate chips.

Roll the balls in the chocolate and put on plate. Then when all balls are covered in chocolate, place in freezer for about 5 mins or til the chocolate hardens.

You are creating a coconut flavored chocolate treat packed with protein. This and a coffee and you can’t go wrong!

P.S. If you don’t want the coconut flavor then omit the coconut oil and just use 3 tbsp honey.
