Peanut Butter Meringue Chewies!

Yummy to our tummies!!   So, last night I was just craving some kind of treat but I didn’t have alot of time to bake for hours and I was out of flour.  So, I remembered I had seen a great recipe online. Which you can view at the below address.  I reworked the recipe just a touch, but to see the original recipe click the link. From by “Bakingnuts”.  Whether you use my adaptation or the direct recipe from, you will love them either way!

Peanut Butter Meringue Chewies!

2 cups all natural peanut butter

2 1/2 cups white sugar

3 tsp vanilla extract

2 tsp Baking powder

1/4 tsp salt

2 whole cage-free eggs

Mix all together in medium bowl.  Then drop by spoonfuls onto a cookie sheet.

Bake at 350F for 12-14 mins or until flattened out and batter is chewy but cooked through.  These cookies are super chewy and will need to cool for 5-8 mins before eating. The cooling process helps them thicken up a bit and it is important to cool them before eating.
